Seafood Coconut Curry with Green Curry Paste

A delightfully refreshing and intensely flavored coconut curry with a pleasing herbal flavor. 
Ingredients:

3 cups of frozen seafood, a combination of shrimp, scallops, mussels, squids
1 cup cauliflower, cut to bite sizes
1 cup asparagus, cut into bite sizes
1 red chili, sliced diagonally
1 cup coconut milk
3 Tbsp green curry paste
2 or less Tbsp of fish sauce
1/2 tsp palm sugar
2 kaffir lime leaves, finely sliced


Method:

Heat 2 Tbsp of canola oil. Add the curry paste and cook for about 2 to 3 minutes on medium heat. Then add the coconut milk and add cauliflower. Cook for 2 minutes then add the asparagus. After a minute or two add the fish sauce and palm sugar. Adjust the seasonings. Add the Kaffir lime leaves and remove from heat.

Serve it over rice , eat it with pancakes or you can add noodles to this dish to make it into a curry noodle dish.
