Asian Salad with Peanut and Rojak Paste

Rojak paste can be found in the Asian grocery stores. It is a thick caramelized sauce made out of chili, tamarind paste, shrimp paste, oyster sauce and brown sugar with a  sweet, salty and spicy flavor. Ingredients:

1/2 a cucumber, peeled and sliced
5 radishes, sliced thinly
1/2 jicama, sliced thinly
1/2  carrot, sliced thinly
1/2 red onion, slice thinly
2 sprigs Vietnamese mint leaves
juice of 1 small lime,
1 Tbsp ready made rojak sauce
1/2 cup peanut sauce

Method:

Mix all the sliced vegetables in a bowl.
Add about 1/2 a cup of peanut sauce and 1 Tbsp rojak paste in another bowl. Add the lime juice and mix until well combined. Adjust seasoning  and the amount of sweetness according to your taste. Once you get a nice sweet , salty, tangy  and spicy taste add it to the vegetables and gently toss it until the sauce clings to the vegetables. Serve at once to retain the crunchiness of the vegetables.

For the quick and easy peanut sauce, 

Ingredients:
1/4 cup smooth peanut butter
1/2 cup water
1/2 cup coconut milk
1 to 2 tsp Thai red curry paste, or to taste
3 Tbsp sugar or to taste
2 tsp tamarind paste
2 tsp lime juice
¼ tsp. salt

Method:
In a deep saute pan, add a little oil and fry the red curry paste for 2 minute on low heat. The add the coconut milk and water follow by the peanut butter. Stir well to combine well. Then let this cook for about 2 or 3 minutes. Add the tamarind, sugar, salt and cook for a further 3 to 5 minutes. I like my sauce to be a little tangy so I added a little lime juice. Adjust seasoning, sugar and salt to your taste. Sauce will thicken, so add a little water if thick.
