Crab-Stuffed Potatoes

Ingredients

2 large baking potatoes
1/3 cup sour cream
3 Tbsp  butter
1/4 teaspoon Cajun seasoning
1/4 tsp chili powder (optional)
1/8 cup cream
1/4 cup milk
1/4cup of shredded cheddar cheese
3 ozs of fresh crab meat, drained
salt and pepper
chives minced , for garnish

Instructions

Preheat oven to 400 degrees F. Bake for about 40 to 50 minutes until done. Set aside to cool.

Once the potatoes are cooked and cool enough to handle cut off a 1/4 inch thick from the top, lengthwise.
Take a spoon and scoop the pulp into a bowl. Leave a 1/4 inch wall around the baked potato.
Combine the potato pulp with sour cream, butter, salt, pepper, Cajun seasoning, chili powder, milk, cream and shredded cheese until well blended. Adjust the seasonings.
Add the crab meat and toss gently to combine. Fill the potato shells with the potato crab mixture. Sprinkle a little salt and pepper.
Bake until golden color and the cheese has melted,  approximately 40 to 45 minutes.
Sprinkle a little mince chives and serve warm.
