Quince Jelly

This tasty, beautiful colored quince jelly was given to me by my friend. 


Ingredients:

4 pounds fresh quince, peeled, cored and diced
3 cups granulated sugar
2 cups water
1 to 2 Tbsp lemon juice


Method:

Put all the ingredients into a large pot and cook over medium heat until the fruit is soft.

Use a food mill or a potato masher to break up the fruit. Cook until the consistency is slightly thick. 

Add lemon juice and remove from heat.  Once cool, ladle the jam into airtight lids.
