Quinoa Patties



2 cups cooked quinoa
1 large eggs, beaten
1/4 cup finely sliced Brussels sprouts
1 Tbsp finely chopped shallots
2 tsp mashed garlic
1 small boiled potato, mashed
1/8 cup grated cheese
some breadcrumbs
salt and pepper
Method:

Add the quinoa, Brussels sprout, shallots, cheese, and garlic mashed potato, cheese, salt, pepper and egg. Mix well. Add breadcrumbs only if the patties are very wet.

Form into round cakes. Heat oil on a saute pan and shallow fry until golden in color. Serve with a spicy chutney.
