Tiny Shrimp Corn Fritters



Ingredients:

2/3 cups all-purpose flour
1/3 cup rice flour
1 egg
1/4 tsp baking powder
1/2 cup water or more
1 medium vadalia onions, finely chopped
2 Tbsp finely chopped green onion
2 Serrano pepper, finely diced
1 cup cooked corn
2  Tbsp tiny shrimp
1/4 tsp salt
1/2 tsp ground black pepper

Method:

Mix flour, salt, egg, baking powder & water and mix until well combined.

Add the rest of the ingredients and mix well. It should be slightly thick batter.

Heat the oil to 375 degrees F. Fry them by dropping a spoonful of batter into the oil. Fry until golden in color.  Serve warm with a spicy chili sauce.
