I used the left over cauliflower pakora to make this curry. Please look at the recipe for on making Cauliflower Pakora on my blog.
For Yogurt Sauce:
1 cup yogurt
2 cups water
1/4 cup besan flour
1/2 tsp cumin seeds
1 tsp mustard seeds
½ tsp fenugreek
1/2 tsp asofetida powder
1 Tbsp ginger garlic paste
1 sprig of curry leaves
4 -5 green chilies, split and cut into half
1/2 onion, sliced
1/2 tsp turmeric powder
1 1/2 tsp garam masala powder
salt
cilantro leaves for garnish
Method:
Blend yogurt with 2 cups water and whisk well and set it aside.
Pour some oil in a pan. Add cumin, mustard, fenugreek seeds and let them crackle. Then add the onions, green chilies and cook them until onion is golden brown. Add the ginger garlic paste, 1/2 tsp asofetida powder, curry leaves and fry for 3 minutes. Keep stirring.
Add turmeric powder and the yogurt mixture. Let curry come to a boil and allow it to simmer for another 15 minutes. Stir occasionally. Adjust seasonings.Now add the prepared pakoras to sauce. Cook for another 2 or 3 minutes. Add garam masala. Stir very gently, not to break the pakoras. Sprinkle with cilantro leaves and serve warm with Basmatic rice
