Healthy, Gluten and Dairy Free Chickpea Salad

Salads need not be completed. Here is a simple, colorful crispy salad without any cheese. I used sweet bell peppers, sweet red onions, and radishes with canned chickpeas. 

Ingredients:

1 cup of red, yellow and orange bell pepper, cubed (bite sizes)
1/2 cup red onion,  cubed (bite sizes)
1/4 cup radishes, cubed (bite sizes)
1 1/2 cup canned chickpea, wash and drained
Juice from 1 Lemon
3 to 4 Tbsp olive oil
1/4 tsp Aleppo pepper flakes
1/4 cup chopped cilantro
salt and freshly ground black pepper

Method:

Put all the cubed vegetables and chickpeas in a bowl. Add 1/2 the lemon juice and 3 tablespoons of olive. Add the red pepper flakes, salt and black pepper. Toss lightly to adjust seasoning. Add more lemon juice or olive oil  accordingly and adjust seasoning. Once satisfied, add the cilantro and refrigerate for 20 minutes before serving.
