A lazy day lunch - Sandwich

Here is a quick way to use up the extra cilantro mint chutney and bread in your kitchen.

Ingredients:

4 slices of seeded batard
a few slices of cucumber 
a few slices of red onions
some slices of ham
butter
few tomato slices
few lettuce leaves
cilantro mint chutney. Recipe below.
Salt and pepper

Method:

In a saute pan, add the round slices of the ham and heat it up for a 1 minute or two.
Grill bread with a little butter until crispy.  
Once the bread is ready and the ham is warm, assemble the sandwich.

Spread some cilantro mint chutney over the buttered side of the bread. Top with the lettuce leaf. Then add the  warmed ham. Then add the tomatoes, arrange a few slices of cucumber and onion on top. Sprinkle a tiny pinch of salt and black pepper.
Spread some cilantro mint chutney on the other slice of bread. Place this on top of the cucumbers.  Halve it and serve immediately with some sweet potato chips.

Ingredients:

1 handful cilantro
1 handful fresh mint
2 Serrano or jalapeno pepper ( to taste)
3 cloves of roughly chopped garlic
1 Tbsp freshly grated coconut
1/2 tsp sugar
2 Tbsp yogurt
2 to 3 Tbsp lemon juice
1/4 cup or less water
salt to taste

Method:

Blend all the above ingredients in a blender or processor. Add more water or yogurt if necessary to adjust the consistency of the sauce. For a sandwich spread, use less water to achieve a spreadable consistency.
