Healthy Coconut Brownie

This is my take on “Coco-Roons” which is sold by Wonderfully Raw, Gourmet Delights. I wanted to make my own since I found the Organic Brownie Coco-Roons  to be very dry and quite fibrous.

There is no baking involved except to slightly dry roast the grated coconut for about 3 to 5  minutes until some of the moisture dissipates from the coconut.




Ingredients:

1/2  cup freshly grated coconut 
1/2 cup raw unsweetened dry coconut
1/4 cup almond flour
2 Tbsp cocoa powder
1 teaspoon vanilla
1/8 teaspoon Himalayan sea salt
3 tablespoons Agave syrup
Method:

Dry roast the freshly grated coconut for 3 to 5  minutes stirring constantly not to color the coconut. Remove from heat. Let cool.

In a food processor, add the roasted coconut and  raw unsweetened coconut and grind them finely.
Add the almond flour, cocoa powder, salt, vanilla and the agave syrup. Blend to combine Notice I did not add any coconut oil. 
The moisture from the fresh coconut is enough to bind the mixture without adding any oil. 
Adjust the sweetness according to your taste.

Form into balls using a small ice-cream scoop.  These are delicious, more moist and  less fibrous than  the Brownie from Wonderfully Raw, Gourmet Delights. 
Store them in the refrigerator to retain the freshness and quality of these healthy, raw dessert.
