Turkey Day

What more can I be thankful for than the gorgeous weather we had for our Thanksgiving.


Classic pumpkin pie


Cranberry Relish                                          Turkey was brined in a mixture of herbs, grated apples and salt.

Celeriac and brussels sprout remoulade made with Crème fraîche, whole-grain mustard and hot sauce. A refreshing, crisp addition to the Thanksgiving meal.


The rub was a mixture of homemade Portuguese spice, salt and paprika. Also, a thick coating of mayonnaise was applied to the turkey before roasting. 
This is an excellent way to cook a turkey. The combination of brining, applying a rub and coating with mayonnaise made the turkey very flavorful. 


Instead of the usual bean casserole, I made asparagus and boiling onion casserole with cream of mushroom soup sprinkled with french fried onions.
