Beluga Beans Burger on Crumpets

This is my first time cooking with these petite Beluga lentils and I am very pleased with the results. 
With a likeness to caviar, once cooked, Beluga's delicate and earthy flavor is a sure winner in this burger recipe. 
For gluten free individuals,  shallow fry without dusting with flour.


How to make these delicious burger.

Ingredients:
1 cups beluga lentils

Method:
Since lentils do not require soaking wash and simmer in 3 cups of water for about 20 to 3 minutes. I added some crushed garlic, and a tablespoons of olive oil. 
Cook until lentils are soft  but still hold their shape. I do not like draining the water in which the lentils were cooked. When pressed together, you should be able to form a ball.
Set aside to cool.
Additional Ingredients:

8 asparagus, cut into 1/4 inch thick
1/2 cup of yellow onion, diced finely
2 garlic cloves, minced
1/2 cup of diced spicy, chipotle cheddar cheese
salt and pepper

Method:

In a saute pan, add a tablespoon oil and add the onions and garlic and 1/4 tsp of salt. Saute for 4 to 5 minutes. Then add the asparagus, and cook for 2 or 3 minutes. Season and tip this mixture into the cooked lentils. Add the cheddar cheese and combine well. 

Form into patties. Then lightly, dust them with flour and shallow fry these cakes. Serve them with salads or make them into sandwiches.
