Soup Kambing -

Soup Kambing, or "goat" soup  is a spicy broth made of goat meat and bones  and stewed in spices. It is served with bread. This dish is associated with the Indian Muslim community.




Ingredients:

1 lb goat meat with bones
1 onion, chopped 
1 carrot chopped in big pieces
3 celery stalks, cut in large pieces
2 small tomatoes, quartered
6 cloves garlic, crushed
1 Tbsp grated fresh ginger
2 tsp black peppercorns
2 tsp coriander powder
1 tsp fennel powder
1/2 tsp turmeric powder
4  cups of water
3 cardamoms, lightly crushed
1 stick cinnamon
Salt and pepper to taste
Dry fried onions, spring onion, chopped, fresh coriander leaves for garnishing




Method:

Cut mutton in small chunks and place into a large soup pan.

Pound the garlic and ginger into a paste and add it to the mutton. Add the chopped onions, carrots, celery, some cilantro.

Cover it with water and bring it to a boil.. Reduce the heat to low and simmer for about 2 hours.
Skim off the froth as it rises.

Heat oil in saucepan and saute cardamom, cloves, cinnamon .Add coriander, fennel, and cumin  powder and fry for about 4 minutes. Add the turmeric powder and the tomatoes. Add meat and bring it to a boil.
Garnish the soup with fried onions, coriander leaves and spring onion.
