Green Bean Stir Fry with Shrimp Sambal

Ingredients
(Serves 2 )

1 Tbsp cooking oil
2  Tbsp  sambal olek
2  Tbsp  water
3 to 4  cups French beans cut into 2 inch length
salt to taste
1/2 Tbsp  dried shrimps  soaked in water till softened
2 shallot, peeled
2  garlic cloves, peeled
1/2 Tbsp belacan
2 Tbsp coconut milk


Directions:

 Pound dried shrimp, garlic, belacan and shallot with 2 Tbsp sambal olek. Set aside.

In a wok, heat the oil. Then add the pounded ingredients  and stir fry till you can smell the aroma.

Add beans and stir fry for a few minutes. Add the water and cook until water  has evaporated and the long beans are well coated in the sambal paste. 

Add the shrimp and cook until shrimp is done. Add the coconut milk and check the seasonings.  Serve hot with jasmine rice
