Ingredients:
1 lb chicken thighs, skin and bones removed
3 cloves garlic, peeled and mashed
1 tsp ground cumin
1 tsp ancho chili powder
1 tsp olive oil
1 tsp lime juice
Salt and pepper to taste
Salt and pepper to taste
Method:
Combine the above ingredients and rub spice mixture over chicken. Let spices infuse into chicken for at least 15 minutes.
Place chicken in the hot grill. Cook for 8 to 10 minutes on each side. Let stand 5 minutes before chopping into small pieces to be served with the tacos.
Serve chicken taco along with shredded Brussels sprouts, salsa, hot sauce and a cold glass of apple tea.
