Caramelized Onions with Pears and a sprinkle of Caraway Seeds

Caramelized onion with pears make for a wonderful accompaniment with feta, Blue cheese, Stilton on a piece of cranberry and walnut bread or any other bread of your choice.The addition of caraway seeds not only compliments well with the sweet pears and caramelized onions but also gives a distinctive spicy note to the overall dish.


Ingredients:

2 large yellow onions
3 Tbsp oil
1/2 tsp brown sugar
1/4 tsp salt
a good grind of fresh black pepper
1/2 tsp of caraway seeds (optional) 
1 cup of cubed pears (optional)
Method

I use my mandolin to slice my onions uniformly about 1/4" thick. This allows for a uniform cooking without burning easily. 
Turn stove to medium-low heat. Choose a big saute pan or cast iron pan so you can spread the onion on one layer without overcrowding them. Add the oil, followed by the onions and caraway seeds.  Keep stirring for 2 to 3 minute. Sprinkle 1/4 tsp salt and brown sugar, the pears and continue stirring. 
Do not rush to cook this. It will take time to slowly brown and caramelize, approximately 30 to 35 minutes to attain a very rich golden brown in color.

Once you see the onions turning color and sticking to the bottom add a little water, stock  or wine to deg-laze the pan. Continue stirring on low medium heat until the onions are soft, and the color is golden brown. Grind some black pepper and remove from the heat.
