A Plate of Composed Salad with Tyson's Crispy Chicken Strip

A refreshing, tasty and easy-to-prepare composed salad combines  raw, crunchy vegetables with baked Tyson's crispy chicken strip to give a very light and refreshing feel to the palate.  Perfect for a midday lunch or dinner, it can be whipped up in less than thirty minutes. Also, it is a great finger food for parties and picnics. 
The sweet, sour and slightly spicy dressing with the addition of ginger and garlic produce a complexity of flavors. This recipe can be easily modified with different crispy vegetables and other creamy or tangy dressing served with flat breads.

Wash and cut vegetables and refrigerate for at lease an hour before assembling. Toss with dressing just before serving to maintain its freshness and crunchiness.




Vegetables for Salad:

1 large head of butter cup lettuce (Boston Lettuce), leaves separated, wash and spin dry and refrigerate
1/8 cup red sweet pepper, sliced into matchstick-size pieces
1/8 cup yellow sweet pepper, sliced into matchstick-size pieces
1/8 cup orange sweet pepper, sliced into matchstick-size pieces
1/8 cup thinly sliced red onions
1/2 cup finely shaved Brussels sprout.

Refrigerate the vegetables.


Miso Dressing:
2 Tbsp white miso paste
2 Tbsp Champagne vinegar
2 Tbsp lime juice
2 tsp fresh ginger, julienne
2 garlic, mashed
5 Tbsp canola oil
2 to 3 Tbsp honey, (to taste)
1/4 tsp of red chili flakes (tor to taste)
salt and pepper
  
Method:

In a bowl or a blender, add the miso paste, Champagne vinegar, ginger, garlic, honey, lime juice, salt and pepper (to taste), red chili flakes and canola oil and whisk or blend until smooth.
Adjust the consistency of the dressing with a little water if too thick. Refrigerate.

Cooking Instructions for Tyson's Crispy Chicken Strip:

Prepare 5 Tyson's Crispy Chicken Strips according to package directions. Let the chicken stand for a minute or two before slicing. Slice chicken on a bias, 1/4 inch thick. Set aside.

When ready to serve, gently toss bell peppers, Brussels sprout, onions and sliced crispy chicken with  2 to 3 tablespoons of  miso dressing to moisten it. Do not over dress the vegetables. You want to maintain the crispness of the vegetables and the crunchiness of the chicken strips.You can add more later at the table.



To assemble the wraps, fill each Boston leaf lettuce with some of the tossed vegetables and chicken.Sprinkle more dressing if you like and enjoy.
