Jasmine Broken Rice Fried Rice

Broken rice is basically rice grains broken in the milling process. I particulary like the broken Thai Fragrant Rice. It has the same nutty aroma, fragrance and stickiness to Jasmine Long Grain.

This type of rice works very well in Congee or savory rice porridge and in rice pudding (Kheer).

It also makes great fried rice. Just cook the rice the same way you cook Jasmine Long Grain rice. A day old rice is preferred for fried rice.




Ingredients:
2 cups day old cooked rice
2 eggs
2 garlic cloves, minced
1/2 cup green peas
1/4 cup julieened squash ( yellow and green)
3 Tbsp julieened carrot
1 green onion, diced
1 tsp chile paste in oil (optional)
Light Soy Sauce
Fish Sauce
Salt
Pepper
crab meat
Oil for stir-frying, as needed

Method:
Rub the rice between your fingers to get rid of any clumps before cooking.
Break eggs in  a bowl. Add a dash of fish sauce.Set a side.

Add some oil in a wok on medium heat. When oil is hot, add garlic stir until fragrant. Add some chile paste if you like now. Add the carrots and cook for a minute.

Move all the ingredients to one side of the wok. Add a little oil and add the eggs into the wok on medium high and stir to scramble until they are almost cooked through but still a little soggy.

Turn heat to high, add the rice, soy and oyster sauce ,salt and white pepper to taste.  Stir fry the rice about 2 to 3 minutes until well combine. Then add the squash and peas. Keep on stir-frying  for another 1 minute or so. Adjust seasonings.Add the spring onions and minced red Thai chiles if using.
Serve immediately.

  1. Hi! My husband and I love broken rice, but I've never cooked it myself. We only get to eat it at Asian restaurants. Your fried rice looks delicious! I should try it!
