Sweet Potato Patiies


















Ingredients:
1 big sweet potatoes
2 shallot finely chopped fine
2 green chile, minced
1 small Thai chile, seeded, minced

2 Tbsp chopped parsley
2 Tbsp chopped dill
1/2 tsp Portuguese spice blend
3/4 tsp cumin powder
1/2 coriander powder
ground black pepper
1/2 tsp sea salt
flour

Method:

1  Peel sweet potatoes, cut them in big chunks. Add some water and cook them until soft.
2. Mash your sweet potatoes
3. Melt butter in a medium frying pan
4. Saute onions in the butter for about 5 minutes. Add chiles, cumin, coriander, and Portuguese spice blend.
    Saute for a minute or two. Then add the herbs, salt and pepper. Remove and tip it into the cooked sweet
   potato. Mashed and mix to combine. Do not overwork. If difficult to handle add a little flour.
5. Scoop up about 1/4 cup, pat it flat about 1/2 inch in thickness. Form  the rest of the patties.
6. Shallow fry the patties until crisp and lightly brown.



Raita:
1/4 cup yogurt
1/4 sour cream
1 tsp ground cumin
1/2 tsp Portuguese spice blend
2 cloves of garlic, mashed
salt and pepper
juice from 1/2 lemon or lime

Whisk all the above ingredients, adjust seasoning and serve with the patties
