Bacon and Green Onion Gougeres

Ingredients:

1 cup water
1 stick (4 ounces) unsalted butter
1 cup all-purpose flour
4 large eggs
2 ounces shredded sharp cheddar cheese
Freshly ground pepper
1/4 cup sliced green onions
1/4 cup crispy bacon

Preheat the oven to 400°. Line 2 baking sheets with parchment paper. 

In a saucepan, combine the water, butter and 1/4 tsp salt and bring to a boil. Add the flour and stir it in with a wooden spoon until a smooth dough forms; stir over low heat until it dries out and pulls away from the pan.

Scrape the dough into a mixing bowl fitted with paddle attachment.  Beat the eggs into the dough, 1 at a time, beating thoroughly between each one. Add the cheese and 1/2 teaspoon pepper. Combined the green onions and bacon. 
Use an ice-cream scoop to spoon onto the baking sheet, 2 inches apart. 

Bake for 25 to 30 minutes until golden brown. Serve warm or cold. Can be filled with sweet or savory fillings.
