Cilantro Pesto Grilled Tuna on a bed of Jicama Salad

Cilantro pesto makes a good rub for this grilled tuna fish. 
Ingredients:

2 tuna steaks
1 cup packed cilantro
1/8 cup pine nuts, roasted
2 garlic cloves, chopped
1 small shallot, chopped
2 to 3 Tbsp olive oil
1/2 lime juice
salt and pepper to taste

Method:

Add cilantro, pine nuts, garlic and shallots in a food processor and pulse for a minute or two. Then add olive oil, lime juice and process for another minute. Add a little salt and pepper.

Brush some of this pesto on to the tuna steak and refrigerate for 10 to 15 minutes.

Grill the tuna to your preference. I like mine grilled thoroughly about 3 minutes on each side.

I served this grilled tuna on a bed of jicama, carrot, tomato salad.
