Sesame Cookies


This recipe was adapted from "The Soul of a New Cuisine" by Chef Marcus Samuelsson.



Ingredients:
1/2 cup plus 2 tblsp all-purpose flour
1/2 tsp baking powder
4 tblsp (11/2 stick) unsalted butter
1 cup packed light brown sugar
1 large egg
1/2 tsp vanilla extract
1 teaspoon fresh lemon juice
1 cup toasted sesame seed
Method:
In a small bowl whisk flour with baking powder and salt.

Cream butter and sugar until light and fluffy. Add egg, vanilla and lemon juice and thoroughly blend the mixture. On low speed, add flour. Then add the sesame seed and mix well. Set dough in refrigerator for about 1 hour before using.
Set oven to 350 degrees F
Line baking sheet with parchment. Drop a heaping teaspoon onto the baking sheet, leaving about 11/2 inches between cookies. These cookies expand.
Bake the cookies until golden in color about 7 minutes. Remove from baking sheet and cool.
