I used dried tiny shrimp to give more flavor to the stir-fried okra.
10 Lady Fingers, washed and cut diagonally
2 garlic, crushed
1/4 cup sliced onions
1 Tbsp ginger julienned
2 Tbsp tiny baby shrimp
salt and pepper
Heat oil in a wok, Add the garlic, ginger, onions, 1/4 tsp of salt and cook until onions are slightly brown.
Increase heat , add the okra, and stir well until the sliminess disappears. Add a Tbsp of water if needed. Now add the tiny shrimp. Stir fry until the okra is cooked.
Move the okra to the side of the wok. Add a little oil and break an egg. Add a little salt and pepper and scramble the egg with the okra.
Remove from heat and serve hot with rice.
