3 medium pototoes, peeled and cut lengthwise
1 star anise, 1 tiny cinnamon, 2 cloves
Half an onion, sliced lengthwise
1/2 Tbsp ginger, julienned
1/2 tsp cumin seeds
1 sprig curry leaves
1 tsp curry powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
Heat some oil, add the star anise, cinnamon, cloves, cumin seeds and the curry leaves. After a minute or so add the onions, ginger and a 1/4 tsp of salt. Let is caramelize.
Add the sliced potatoes, the curry, cumin and turmeric powder and mix well. Reduce the heat and cook until the spices brings out the aroma. Add about 1/2 cup water. Increase the heat and cook the potatoes covered until done. The spices should envelope the potatoes.
Serve with roti, rice. It goes well with rice and Indian soup, Rasam.
